Location and terroir
Polisot is a commune in the French department of Aube and lies in the Côte des Bar, in the Barséquanais sector of the Champagne. The landscape is shaped by hilly vineyard slopes, which favour sunshine exposure and drainage. The wine-growing environment is linked to chalky soils; a parcel farmed by Champagne Piollot in Polisot is classified as Kimmeridgium.
Climate and viticulture
Polisot lies in the oceanic-continental double climate of Champagne. It is characterised by moderate rainfall, summer sunshine, and frost risk in winter and spring; the average annual temperature in Champagne is around 11 °C. In Polisot, 71.40 hectares of vineyard area are recorded, managed by 50 growers. Of these, 63.30 hectares are devoted to Pinot Noir, 6.40 hectares to Chardonnay, 1.20 hectares to Meunier and 0.50 hectares to other grape varieties.
Champagne Piollot
The 8.50-hectare vineyard estate Champagne Piollot grows Chardonnay, Pinot Noir, Pinot Blanc, Arbane and Pinot Meunier. The proportions are 19, 62, 12, 1 and 6 percent. The family business was founded in the 19th century by Athanase Piollot, has marketed wines fully matured in the bottle since 1986, and switched to organic farming in 2009; full certification was completed in 2014.
Wines and farming
The wines associated with Polisot include Champagne, a Pinot Noir rosé made using the saignée method, and a red Coteaux Champenois made from Pinot Noir. Champagne Piollot also produces varietal wines, including a 100% Pinot Blanc from the parcel Val Colas Robin and a 100% Pinot Noir from Come des Tallants, as well as a reserve cuvée made from 70% Pinot Noir and 30% Chardonnay. The dosage ranges from zéro dosage to extra brut. The vineyards are farmed organically and biodynamically; ageing takes place, depending on the cuvée, in tank, in oak barrels, or in both, with four to six years of lees ageing on the bottle.
