Kaubenheim

Kaubenheim is a district of the market town of Ipsheim in the district of Neustadt an der Aisch-Bad Windsheim in Bavaria. The place lies in the Aisch valley, on the Tief, a left-bank tributary of the Aisch. It was first mentioned in 1103 under the name Cubenheim and, as part of the Bavarian regional reform, was incorporated into Markt Ipsheim on 1 January 1978.

In the Ipsheim area, viticulture has been practised since the Middle Ages. The vineyard sites below Burg Hoheneck include pronounced south-facing slopes in the areas Hohenecker Rangen, Höll and Sonnenberg behind the Kesselberg. The soils consist of red loam and blue Keuper; the vineyards are located on a Keuper slope. A weather station for viticulture in Ipsheim records temperature, humidity, rainfall and leaf wetness in order to assess vine diseases.

The single vineyard Burg Hoheneck is legally assigned to the municipality of Ipsheim and belongs to the Steigerwald area in the Qualitätsweinbau region Franken. As part of the land consolidation and redesign of the vineyards from 1979, on 28 hectares of vine-growing areas, land gradients of around 20 to 45 percent were laid out or redesigned, while the natural shape of the terrain was preserved.

The project included, among other things, improved access, surface drainage, adjustments to the terrain, protective plantings, restructuring of land parcels and measures for landscape management. For this purpose, around 4.0 kilometres of pipelines and drainage ditches were created, as well as three retention basins with a total storage capacity of 16,000 cubic metres. The newly planted vineyards were divided into three spatially separated sections by 3.6 hectares of biotope areas. A total of 120,000 vines were planted, including around 80 percent Müller-Thurgau, 10 percent Bacchus, and together 10 percent Silvaner and Kerner.
